Vernaccia di San Gimignano grape pomace harvested at the press is subjected to a distillation process, which takes place very slowly, discontinuously, inside traditional copper stills.
The product obtained is then left to age for a few months in stainless steel containers.
The finished product is then packaged as Grappa di Vernaccia di San Gimignano: it is characterized by an intense and sweet fragrance, reminiscent of the just-pressed Vernaccia di San Gimignano marc, as well as a full and dry taste.
