".. To Carlo Falchini, Son of Pier Giovanni di Lorenzo, born August 22nd 1627, on November 19, 1682
was granted the Florentine citizenship thanks to the Sovereign Cosimo III de' Medici for having faithfully served him and his family".
In the "Treaty of Agriculture" written by Domenico Falchini in the XVIII century it reads the following:
“His son Domenico, born on the 22nd of October 1671, on the 4th of February 1710 took over from his father Carlo,
who was already a factor in Lappeggi, in running the estate. On 22 July 1713 Domenico was appointed
by His Royal Highness Cosimo III de'Medici as the Superintendent of the Villa of Lappeggi
(Bagno a Ripoli, Florence)". In fact, it was in Lappeggi in 1720 that Domenico wrote his famous "Treaty of Agriculture",
in which he speaks "of all that concerns (...) around the cultivation of all sorts and to have the vines pruned
and to making the fate of noble wines (...) white and red, and to make the oil called virgin and other things".
This passion and commitment to the care of the vineyards, olive groves and the production of fine wines and olive oils
still distinguishes the Falchini family in their property Casale,
an historic landmark in San Gimignano.
